Carrot rice is a tasty,healthy and nutritious recipe and from groundnuts, carrots and spices like cinnamon and cloves.
Ingredients:
2 cup rice
5 carrot
2 tsp fried groundnuts
2 onion
2 tsp oil
small piece of cinnamon
1 tsp pieces block gram
2 cloves
1 tsp mustard
1 tsp bengal gram
5-6 curry leaves
Salt to taste
For Masala:
2 tsp coconut (grated)
4 red chillies
1 tsp coriander seeds
3/4 tsp cumin seeds
Method of making carrot rice:
First heat the pan, add 1 tsp oil. Add red chillies, coriander seeds, cumin seeds and fry till they start turning brown.Add coconuts(grated) and remove from the heat. Grind the masala after it gets cool.Grind seperately, the fried groundnuts coarsely.NowCook the rice and let it cool.First put the carrots in warm water then grate it without peeling the skin.Heat oil in a pan. Add cloves, cinnamon, mustard, broken block gram and Bengal gram. Fry them.Add curry leaves and chopped onions. Once the onion is cooked, add the grated carrots. Fry till the carrots are cooked.Add rice and fry in a low flame. Add saltto taste and the grounded masala powder. Mix it well with the rice.Lastly add groundnut powder and remove from the flame. Serve the carrot rice hot.
