Brinjal Rice is a little spicy rice recipe made by tempering the brinjals with mustard seeds and curry leaves and then mixing with cooked rice. It is very yummy.
Ingredients:
3 cups plain rice
2 1/2 cups brinjals
1 tsp mustard seeds
3 tsp. vegetable oil
Few curry leaves
3 tsp.sliced green chillies
1 tsp turmeric powder
3 tsp lemon juice
Salt to taste.
Method of making brinjal rice:
Cook rice and keep aside. Then in a pan fry the mustard seeds, curry leaves, add the brinjal and green chillies. Stir on low flame, cover and cook for 10 minutes.Add salt to taste and turmeric powder and cook for another 5 minutes. Remove from flame and add lemon juice stir well and mix with the rice. Now the serve Brinjal Rice hot.
